Arborio is a rice whose large grains, with an accentuated tooth and a pearly appearance, have the property of releasing plenty of starch during cooking, ensuring excellent creaming. It is a classic of Italian cuisine for the preparation of every risotto recipe. It is widely cultivated throughout the Pianura Padana Valley.
