Yellowfin Tuna belly filletsare obtained from the ventral muscular bundles, the most valuable part of the tuna, and are hand-worked into fillets. They arecompletely made in Italy (in Maierato plant precisely), in all the production phases according to a centenary tradition. After the tuna has been steamed, the best fillets are chosen one by one and they are hand-potted, following strict rules about food hygiene and safety. Then a long ageing follows in order to grant that intense and unique taste.
