Milanese cutlet with potatoes:

- Veal chop
- Clarified butter
- Flour
- Bread crumbs
- Eggs
- Yellow potatoes
- Rosemary
- Salt

Method :
Start with the potatoes, cut them into regular shapes and season them with melted clarified butter, rosemary and salt and bake for 45 minutes at 400F° in an uncovered pan.

Beat the meat and clean the bone well, dip in the flour then in the beaten egg and then in the breadcrumbs. Fry at medium temperature (300 F°) in clarified butter, stirring frequently so that it does not burn.
